BEACH CLIFF - Fresh From The Sea
The steps in producing quality sardine and fish steak products
are simple:

Fresh from the cold Atlantic waters of the Gulf of Maine, the
day's catch is taken rapidly by company ship to one of the two
modern BEACH CLIFF packing plants in Maine.

A salt water ice slurry refrigeration method insures that the
fish are as fresh in the can as just caught. The temperature
is held around 32°F and quality control inspection continues
at every step of the process.

In the packing room, sardine size herring are packed four to
twelve fish per can. Larger fish become BEACH CLIFF
Fish Steaks and fillets. Regardless of size or product, every
single can is packed by hand - over 65,000,000 cans a year!
No machine has ever been invented that could match the speed,
skill and care of our Maine packers.

The packed cans are then cooked twice. First the freshly packed
herring go into huge cookers for 25 minutes. Following the first
cooking, the special BEACH CLIFF sauces are
added to the sardines or fish steaks to enhance the succulent
ocean-fresh flavor of the fish. The cans are then sealed and
enter a retort for a final cooking.

After cooling, the cans are inspected and hand packed for shipping.
In our vertically integrated company, we even manufacture the
aluminum cans.
